My cousin is taking a trip to Europe and I am making her a gift pack. I just need to know how and where can I get her stamps that she can use to send postcards back to the states.
No, you can't use U.S. stamps to mail postcards in Europe. You need to buy stamps there. For example - If your cousin is in Paris, he/she needs to buy stamps in Paris to place on the postcards that will be mailed to the U.S. Otherwise, how will the Parisian postal workers get paid? I am going to Europe and will be visiting 3 countries with my US passport. My question is ... will there be separate entry stamps for each country I visit in Europe?, or will I need one stamp for the entire trip?. In other words would they stamp my passport every time I cross borders within Europe?

In EC countries it is usual not to stamp your passport.
When you first arrive in Europe you will have to clear immigration. There is nothing to stop you requesting a stamp, it will be granted. If they ask why you want a stamp tell them it's for the Tax Authority at home so that you can prove you were not in the US.
If your point of arrival is in a Schengen Agreement signatory country and you stay in the Schengen zone your passport will not be checked again. the border crossings are no longer manned.
